This being our first video, we thought we’d post something that we really love and have come to enjoy –  falafels. We’d previously had the best tasting falafels at L’As du Fallafel in Paris and also had good ones in New York and  Toronto so we thought it was time to make our own falafels from scratch. The good thing about falafels is that they’re easy to make, they taste amazing and they’re chock full of nutrients! The preparation, as per the video, is pretty straightforward. To get the best tasting falafels, we ground our own spices but if you’re in a bit of a rush, pre-ground spices will do.The falafels turned out great so we thought we’d share this recipe and video. Hope this will get you to make your own falafels!

Falafel

Ingredients

  • 1 lb dried chickpeas
  • 4-5 cloves garlic, roughly chopped
  • 1 small onion, roughly chopped
  • 1/2 cup fresh parsley, roughly chopped
  • 2 tsp salt
  • 2 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp black pepper, or to taste
  • 1/2 tsp cayenne pepper, or to taste
  • 1 1/2 Tbsp chickpea flour
  • neutral oil, like canola or grapeseed for deep frying

Directions:

  1. Put the chickpeas in a large bowl and cover with 3-4 inches of water then soak overnight.
  2. Rinse and drain the chickpeas well and transfer to a food processor along with the chopped garlic, onion, parsley, salt, grounded cumin seeds, grounded coriander seeds, black pepper and cayenne pepper.
  3. Pulse until a rough, coarse meal forms. Transfer into a bowl, add in the chickpea flour and stir.
  4. Cover the bowl with cling wrap and refrigerate for an hour.
  5. Heat 3 inches of oil in a large skillet over medium heat.
  6. Form falafel mixture into round balls using a falafel scoop or a cookie dough scoop.
  7. Fry for 5-6 minutes (or until golden brown). Remove the fried falafels from the oil using a bamboo strainer or a slotted spoon. Let them drain on paper towels.
  8. Serve hot; Falafels are delicious on their own with hummus, and tahini sauce or served over greens or our fave, in pita!
